One of Ecuador's culinary specialties is ceviche, which is raw shrimp and whitefish "cooked" in an acid broth of citrus and herbs. It's amazing. Here is my very first bowl of it. (note the delicious bowl of popcorn and fried plaintains in the background, which is the best bar snack EVER)
